I love this time of year. The warmer weather means more time outside and additional opportunities to do things together as a family. The best part is when the sun begins to set and it just feels so nice relaxing outdoors. After a nice dinner on the patio or in your backyard, you need a perfect dessert to top off the evening, right? One of my favorite summertime yummies is a simple strawberry pie that only needs a few ingredients.

Easy Strawberry Pie Recipe

Strawberry glaze graham pie crust with cool whip

Ingredients

  • 2 lbs of strawberries, washed and sliced
  • 1 graham pie crust
  • 1 small tub of strawberry glaze (we prefer the Marie’s, about 14 oz)
  • 1 small tub of COOL WHIP Whipped Topping

Instructions

  1. Combine the strawberries and glaze until each piece is lightly coated. Be careful as you don’t want to squish the strawberries.
  2. Pour mix into the pie crust and refrigerate. The pre-made crust I usually use has a plastic cover that can be washed and inverted to make a nice lid.
  3. Allow to cool for at least half an hour or until well-chilled.

Before serving, add a dollop of COOL WHIP to the center of the pie. I have to admit this is the first time I did this and it was so pretty! Plus, it complimented the sweet strawberry filling perfectly. You can also opt to put COOL WHIP on individual slices instead.

The mixture does not solidify so be prepared to scoop up extra strawberries after plating. The ‘slice’ will look like an upside-down mess but your family and friends will love it. Each time I make this, it only lasts 1-2 sittings in my house.

Everyday treats don’t have to be extravagant but they allow for some casual bonding time. Especially when it is warm, though, rich cakes and loaded cookies just feel so heavy. I love that this dessert, in addition to being super easy to make, is so refreshing at any time of day. This is one special item my family looks forward to each summer. I never made this for others at a gathering because I as a bit embarrassed that it looks too plain or the taste would be overpowering for some. With the use of COOL WHIP, both of those anxieties are taken care of. This may just be what I bring to my next potluck/picnic!

Ooh, good idea. I’m sure the slight tartness would be a great addition!

This looks so delicious. My mom makes a similar pie to this, and it always tastes wonderful.
